Harira ist ein traditioneller Eintopf der arabischen Küche und vor allem in Marokko sehr verbreitet. Ein Festschmaus für Liebhaber von Lamm und Koriandergrün, wobei nach Belieben das Lamm- durch Rindfleisch ersetzt wird und das Koriandergrün separat dazu serviert, oder ganz weggelassen werden kann.

2 EL | eingesottene Butter |
1 Bund | Petersilie |
1 Bund | frischen Koriander |
2 | frische Eier |
2 EL | Zitronensaft |

Pfeffermischung Marrakesch aus der Pfeffermühle. |
Vorbereitung
- Die Kichererbsen und Linsen in jeweils 1/2 Liter Wasser über Nacht einweichen.
- Das Lammfleisch in 2.5 – 3 cm grosse Würfel schneiden.
- Den Stielansatz der Tomaten rausschneiden und auf der Rückseite kreuzartig anritzen und für 18 Sekunden in reichlich kochendem Wasser (5Ltr.) überwallen, mit einer Lochschaumkelle rausnehmen und in kaltem Wasser abkühlen. Danach enthäuten, entkernen und in 1 cm grosse Stücke schneiden.
- Die Zwiebel fein hacken.
- Den Stangensellerie in dünne Scheiben schneiden.
- Solltest Du keine eingesottene Butter haben, so kläre die benötigte Menge Butter die Du brauchst selber. Gib die Butter in eine kleine Pfanne und erhitzen sie bei mittlerer Hitze. Verwende nun die durchsichtige Butter die oben aufschwimmt, die Buttermilch am Boden der Pfanne schütte sie weg.
Zubereitung
- Das Lammfleisch, Tomaten, Zwiebeln, Tomatenpürre, Stangensellerie, Kichererbsen und die Linsen in einen grossen Topf geben und 2 Liter kaltes Wasser beigeben.
- Füge die Gewürze Zimt, Safran, Kurkuma, Paprika, Ingwer, Salz, Pfeffer, Lorbeerblätter, Nelken hinzu und bringe das Ganze unter ständigem Rühren zum Kochen.
- Sobald es kocht, schöpfe den Schaum von der Oberfläche ab und gebe die eingesottene Butter dazu. Das Ganze jetzt bei kleiner Hitze für 1 1/4 Stunden köcheln lassen und alle 5 -7 Minuten mal umrühren. Nicht zudecken!
- Reis in einem separatem Kochtopf kochen, abkühlen und im Sieb abtropfen lassen.
- Verrühre nun das Mehl mit ein wenig Wasser (ca. 7 EL.).
- Fügen beides nach der Kochzeit dem Harira hinzu und lasse es weitere 15 Minuten köcheln.
- Petersilie und Koriandergrün hacken, und dem Harira kurz vor Ende der Garzeit hinzufügen.
- Die Eier mit dem Zitronensaft verrühren und dem Eintopf beimischen, umrühren und abschmecken.
Tipps
Dieses Gericht kann man auch einen Tag vorher zubereiten. Ganz langsam aufgewärmt schmeckt es fast noch besser. In diesem Fall solltest DU jedoch die Eier und den Zitronensaft erst kurz vor dem Servieren beifügen!
